We don't know what defines a line item as "open". I guess that "ship
quantity" is "UnitsShipped"? There are no fields named UnitsOrderedSO and
UnitPriceSO.

Question about recordsource

It would help if we had some context for your question. Forms have a Record
Source property that you can enter:
1) nothing
2) a table name
3) a query name or
4) a SQL statement like "SELECT ... FROM...

change control source or value of text box

I expect you can simply set the control source to:
=Nz([Line Due Date Field],[PO Due Date Field])
Make sure the name of the control is not the name of a field.

Multiple Totals Columns in a Pivot Table

You could possibly pass in the "a specific column" to the query to create a

I assume there are no subreports in this report. You should be able to add a
text box to the Order group footer with a control source like:
=[Order Qty]-Sum([Qty Supp'd])
