Default how do i edit fields in contacts view

I would like to have 7 or 8 numbers showing when I open each of my contacts.
How do I do that?
How do I change the categories already exsisting under Phone numbers in each
card?

I have tried right clicking on the contact, then "Open" then I get 5 tabs
(general, detail, activities, certificates, all fields) none of which seem to
have suitable places for me to enter/edit the stuff I want to put in "Address
Street", "Address City" etc.
