Default How do I change my Normal template?

Thank you so much - I've been trying to figure out how to change the normal
template in 2007 for months! None of the help instructions were clear enough.
Just stated "...Open the template and make sure you have the template open
before you make changes..."

upgraded from Office 2003 to Office 2007 (wow what a pain-in-the-ass change)
