Interesting. Word doesn't see these as keyboard shortcut custom assignments either (i.e. it doesn't list them from Office
Button=Print=Print
and selecting 'Key Assignments') and saves an 'attachedToolbars.bin' customization.xml part to Normal.dotm, even though the macro
was only in a specific document (and now the Office Button has a different keyboard shortcut in Word than its sister apps )

You can re-instate the Word 2003 File Menu accelerator keys if you want. I
