Default automatic contact list when addressing an email

You are confusing two different features of Outlook. You are using
autocompletion, which has nothing to do with your Contacts. It only uses a
cache of your last 1000 recipients (in Outlook 2003) or 2000 recipients in
current versions.
If you want to use your Contact list, you should be using autoresolution,
not autocompletion. After you type the letters in the To: field, hit Ctrl-K
to resolve against your Contacts and bypass your autocompletion cache.
