It sounds like you are trying to replace existing prices with new, updated
prices.

If you keep historical information about "orders" (including products),
there's a chance that you could lose "former pricing" information when you
simply update a product's price.

How depends on what, and you haven't described what use you intend to make
of the product/price data...
