Default how do i edit fields in contacts view

You would need to customize the contact form, publish the new form, and make it the default. These pages should help you get started:

http://www.outlookcode.com/d/forms.htm
http://www.outlookcode.com/d/contactform.htm
http://www.outlookcode.com/d/newdefaultform.htm

You cannot change the phone number fields listed in the dropdown list.

I would like to have 7 or 8 numbers showing when I open each of my contacts.
How do I do that?
How do I change the categories already exsisting under Phone numbers in each
card?
