Default time calculation in ACCESS

Part of my Db is a time clock type system in which my employees "clock in"
and "clock out" of lunch and the workday. Is there a way that I can work
with these timestamps (formatted as HH:MM) where I can calculate sums with
the existing data? Being that it is base on 60 minutes to the hour I am
having some trouble with this.
