Default default style "normal"

This is controlled by whatever template is used to create the new document.
By default, that's Normal.dot. You could accomplish what you want by editing
Normal.dot directly and changing the style of the default paragraph mark to
something other than Normal.

Or, you could create a new template and give its default paragraph mark that
desired alternative style. Then, use that template whenever you want a
document that defaults to the non-Normal style.

You might want to go to Word's Help section and read up a bit on templates
and styles to make sure of what you want to do and the various ways to
accomplish it. I hope this helps some.

I created a new template (doc.dot) and used Organizer to link my new
documents to it, but I still get Normal as the default when I create a new
doc.

Yes. To use "doc.dot", you choose File - New, navigate to that template,
select it, and choose OK. If you want to use that template all the time, you
could create a Word shortcut that uses that template automatically (or, you
could g ahead and change the default style in Normal.dot--many users are
reluctant to do that, though).

If your doc.dot template were in the location shown here, the following
target string in a shortcut would automatically create a new document based
on that template:

"C:\Program Files\Microsoft Office\OFFICE11\WINWORD.EXE" /t"C:\Documents and
Settings\User\Application Data\Microsoft\Templates\Doc.dot"

Note that the location of WINWORD.EXE and DOC.DOT on your computer might
well be different.

Default default style "normal"

As Herb mentions, you can create custom templates and use them for creating
your documents. You can set the styles in them as you want.
