Default How do I over-ride command to change ink cartridge?

I have an Epson printer that uses up my color ink, even when I primarily
print documents in black ink. I want to over-ride the warning to replace a
color ink cartridge, and have specified black ink only on my printing
options... but it refuses to let me proceed!

The option to go ahead and print has worked at times before, but is not
allowing me to do it now. This is a good printer, but if I had known it
constantly uses up color (even when I specify Black ink only), I would NEVER
have bought it! Grrrrrrrrrr!

This has nothing to do with Word - check your printer manual.
