Default Phone numbers all runnig together

When I enter phone numbers apparently there is a default somewhere to have it
set with no separation. It shows up like 1234567891 instead of 123-456-7891
or even (123) 456-7891
Does anyone know how to fix this please?

There is no such setting. You cannot control how Outlook masks phone
numbers.
You can try these hacks if you think you need to:

You need to set your Windows dialing settings.
