Default What does the & symbol in a formula do?

It's a concatenation function

Basically combines data

So

"A"&"B" becomes AB
"A "&"B" becomes A B
etc

Default What does the & symbol in a formula do?

It tells SUMIF to use what's in cell D5 instead of looking for the text
string "D5"

=SUMIF($AN$6:$AY$6,"=$D$5",AN8:AY8)

would look in AN6:AY6 for the text string
