"Send Using" in Outlook 2002

Default "Send Using" in Outlook 2002

I customized Outlook 2000 to show a "send using" button instead of a simple
"send" button. I have e-mail accounts from multiple universities, a few
companies, and a few non-profits I work with. In 2000, "Send Using" let me
choose the sending account for every e-mail I sent. That helped me avoid
sending e-mails to my students at one university through my account at
another, for example.

I can't find a way to make that happen in Outlook 2002. It seems to have
two buttons "Send" and "Accounts" to do the job that one button used to do.
At best, I can now do in three clicks what used to take two. At worst, I
forget and send inappropriate mail through my default account.

Is there a way that I can set up 2002 to work as well for me as 2000 did?

Let's be real. It's a small thing, but it aggravates me every time I send
an e-mail.
