Default convert plain email addresses to hyperlink

I have many, many email addresses in Outlook contacts. Is there an easy way
to make a hyperlink so that clicking on a email address in contacts will
load that address in a new email box with the name and email address in the
"TO" box.

you'd need to put them in the notes field. The easiest way would be to
export to excel and use a formula to copy the address to the notes field. It
won't work if you have notes in the field though.

Why not just right click on the contact and choose new message to or select
and use the actions, new message to command?

Why not add the "New Message to Contact" action to the toolbar, then select
the contact and click that button?
