Default Global Address Book Display Format

I am running Exchange 2000 with OutlookXP and Outlook 2003. When I do a
Ctrl+Shift+B to display the Global Address Book, I want to rearrange the
view (add some fields and remove some fields)

I have looked far and wide to search for this functionality and I can't find
it. How Do I do this? (or where should I look)

Thanks
