can you copy hundreds of fields from a column in excel to a column in an
access table?

Default copy from excel to access

I believe that your question concerns copying hundreds of cells from a column
in excel to a field in an access table? If so Yes. Use the Import function.

File / Get External Data / Import

This will create a new table with a single field corresponding to the Excel
column.
