Sarah-- Have you tried placing these fields in a table?
You may have found your solution already (as it was a
month ago...), but placing the field in a table and then
removing the visible borders will get you the result you
want. The text in each field will wrap within its own
column, so you're not going to be restricted to x-number
of characters on a line.

You need either a table with fixed size cells or to use frames (more
complicated).

What you are talking about is what Word calls an "online form." Check this
