Default set up a shared workbook to be view/edited at the same time?

i'm trying to setup a workbook to be viewed / edited and save by different
user at the same time.

I have this issue as well with a shared workbook and information
getting moved around when different users sort the data. We had to
set up a ground rule that sorting was not "allowed" when the workbook
is shared.

Is there a way around this?
