Default Section changes to headers and footers

How can you create two or more different headers in one
document? I tried this using section breaks and whenever
I changed the header, it changed throughout the entire
document, but I needed it to be different for a landscape
page.

My guess is that you'll find that the headers in your
second section are marked "same as previous", which makes
them identical to the headers in your first section.

Double-click inside one of your second section headers and
look at the header toolbar: there's a "same as previous"
button (hold your mouse over each button in turn until you
find it) and you'll see that it's depressed. Click on the
button to undepress it, and the second section and first
section headers will now be independent and you can change
one but not the other.
