How can I modify my Outlook to place different email return addresses on my
messages I send out?

Click on the 'Accounts' button at the top left of the email pane. It will
help if you have renamed your account names (otherwise the dropdown list will
just say 'account 1', 'account 2' etc)

If you have only one account, change the "Your Name" and "E-mail Address"
fields of that account to refelect the values you want. You can also use
the More Settings button and enter a value for the "Reply E-mail" field on
the General tab. That will cause your recipient's mail client to send the
reply to an address other than what they get from the From address.
