Click on the 'Accounts' button at the top left of the email pane. It will

If you have only one account, change the "Your Name" and "E-mail Address" fields of that account to refelect the values you want. You can also use the More Settings button and enter a value for the "Reply E-mail" field on the General tab. That will cause your recipient's mail client to send the reply to an address other than what they get from the From address. -- Brian Tillman
