Default how can you change a shape label?

i used to use visio 2003 and could change shape labels by right-clicking on a
shape, going to format/protection or behaviour and changing it here

i don't seem to have this option in 2007 and can't find it anywhere else!
can anyone help?

(by shape label, i mean the bit that appears after 'Shape Data' above the
properties table)

Do you mean the menu Format - Special?
It is normally disabled,
menu Tools - Options - Advanced
and enable "Run in developer mode"
