Default can I show my irregular hours of work on the calander

I and fellow office workers have irregular hours. Can outlook calander
record who is in the office and who is out?

Only when using Out of Office. Outlook will only use one set of working hours, not irregular ones or irregular shifts.

Creating appointments for those times and setting the time as free might be
a method but it would be time consuming.
