I have Visio Professional 2003, and I want to change the date format in the org chart stencils that [come with the product and] have a date

Date format
Are you referring to the Title/Date shape? Select the shape, then click on
it one more time. You should see gray handles now. Press F2 to edit text. Select just the date portion and choose Insert Field.
