Default "Display as" field

How do I change the format for the "Display As" field for my contacts?

Right now, it automatically fills in full name and email and I only want it
to show the nickname.

I know I can go in and edit the field for each individual contact. I was
wondering if there is a way to change it so all my contacts will change and
future contacts entered in will automatically reflect this format.
