Default "Mark as Unread" shortcut combo

It looks as though Microsoft has updated MSO 2007 such that the shortcut
combo for "Mark as Unread" changed from Ctrl+U to Ctrl+N, and used U for
something else (Follow Up). Is there a way that I can set the shortcut
combinations the way I want them to be?

Default "Mark as Unread" shortcut combo

CTRL+U is "Mark as Unread" here but that could be different from the
localized version that you may be using. I'm using the English version here.
