Default Flags for Follow Up Dialog

I would like to add my own "Flag to" follow up reasons to the drop down list
on the Flags for Follow Up Dialog. How is this done?

I'm actually trying to achieve a way I can add a note to an email for further
followup that goes beyond the flag text. If not the reminder box, how can I
do this?

You can use either of the unused built-in fields -- Mileage and
BillingInformation -- or add your own custom field to store the inforamtion.
The details beyond that will depend on how and when you want the user to be
able to set and retrieve that information.
