Default anniversary

How do you enter the date for an anniversary of a new contact WITHOUT it
showing up as an annual recurrence? I am using the anniversary field for a
1st date of service field that I want to be able to sort chronologically by.

You'd need to use a different field - either one of the user fields or
create a custom field.
